Marinated Tiger Prawns With Lime, Chilli, Ginger and Flat Leaf Parsley

prawnsFollowing on from our seafood masterclass on How to Prepare Tiger Prawns, why not try out this delicious Marinated Tiger Prawns recipe with an Asian flavour.

16 large tiger prawns, peeled
Juice of two limes
5 cm piece of fresh root ginger, peeled and finely chopped
2 birds eye chillies, deseeded and finely chopped
1 red onion, finely diced
1 small bunch of flat leaf parsley, roughly chopped
Olive oil
Sea salt                                     

1. Mix all of the chopped ingredients and cover with olive oil, add the prawns and marinate in the fridge for four hours.

2. When ready to cook, heat a large frying pan to a medium heat, add the marinated prawns to the pan and cook for 2 minutes either side or until they change colour. Heat up any remaining marinade with the prawns. 

3. Arrange your cooked tiger prawns on the plate with a spoonful of the marinade on top. Garnish with a lime wedge and sprinkling of sea salt.
