Tiger prawns are a succulent and delicious seafood treat and fresh ones need to be prepared properly before cooking. But don’t worry, it’s really a simple, step-by-step process.

Mussel Inn Glasgow’s Food and Beverage Manager Matt Johansson shows how to do it.

Make sure you buy really fresh Tiger Prawns with the shell on and head.

Step1. Hold the body of the prawn in one hand and firmly twist off the head. You can keep the heads for stocks and sauces later on.

Step 2. Split open the shell along the underbelly of the prawn and peel away the shell from the flesh (you can also keep the shells for stocks and sauces). You can leave the tail segment of the shell on.

Step 3. Using a small sharp knife, run the tip along the back of the prawn and remove the intestinal tract.  To butterfly, make the slit deeper.
